Site Identity is a WordPress feature, not Genesis. If you go to the Apearance / Customize page in the WordPress Admin area, SIte Identity should be the first option at the top of the menu on the left. Upload a logo 512x512 and WordPress will automatically generate the required sizes for the favicon and mobile devices.
Of course, if you choose not to use the WordPress feature, your child theme can still use a traditional favicon. Copy it into the child theme's root directory.

The reason I ask is because there's an error on your site coming from the theme's responsive menu jQuery script that says jQuery is not defined. This means that the menu script is loading before WordPress loads its jQuery files. This shouldn't happen.
Every script loading on your site has a reference of data-wpacu-script-handle. I don't know what this reference is, but it's probably a plugin. I suggest you deactivate any and all optimization and caching plugins, clear all caches and see if the problem goes away. If it does, reactivate each plugin until the problem returns. The last plugin activated is the culprit.

I'm not understanding why dashicons would be adding so much overhead to your site, though. The files are miniscule.

If they installed a new version of MySQL without copying over the old database, this is something they should fix. When MySQL is upgraded, it doesn't auto-migrate older data. This article is from a few years ago. It's about recovering MySQL tables after a MacOS upgrade. Also, what you may be able to do is restore your DB backup to a local instance of MySQL, some it and restore the dump file back to your primary server. It will take some effort and there's no guarantee it will work, but I would try.

The error in the first example, undefined function add_filter() may also be a WordPress issue. add_filter() is a WordPress Core function. Because Genesis can't find add_filter() and you have so many other WordPress Core errors, it leads me to suspect you may have an incomplete or damaged WordPress install. Before I did anything else, I would reinstall WordPress and see if that makes a difference.

Since this is related to Google search and you're not receiving the errors when visiting the site, it is very likely either a 500 or 503 error code. A search engine can’t crawl and analyze your site if it gets 500 and 503 errors. Given the fact that there are quite a few errors shown in your image for WordPress core files, the chances of this being related to the Aspire Pro theme or the Genesis Framework are miniscule.
The 500 code is generated when the server encounters an unexpected condition that prevented it from fulfilling the request by the client. 500 errors are often related to a bug in PHP. But if this was the case, your site would crash when accessing it. Since it's only happening for Google, there's something else going on.
The 503 error code means the service is unavailable. A web server will respond with this status code when it is temporarily unable to handle the request due to short-term overloading or maintenance.
5xx error codes are the most difficult of all to diagnose. It’s hard to find the exact problem they indicate and its simplest solution. Also, you usually can’t solve these problems by modifying the page code and you may need to ask developers or server administrators for help.
I suggest you enable WordPress debug and see if anything shows up when you access the site. Also, check you server's error logs for details. Switch to a default WordPress theme to see if it makes a difference. Check the space on your server. If your server is short on space, it will generate a 507 insufficient storage error. Are you using Cloudflare or any other proxy server? If so, you could be getting 504 bad gateway errors.
Whatever the case, you should contact your server host or site developer for further assistance. Best of luck in getting this resolved.

If you edit the block as HTML and add an ID, it will allow you to convert the block to an HTML block where you can then add any additional features you'd like.

add_image_size( 'genesis-singular-images', 702, 526, true );
Change the true to false and then regenerate thumbnails. Changing the true to false causes WordPress to scale images rather than crop them. Here are more details: https://developer.wordpress.org/reference/functions/add_image_size/

Support for non-HTML5 themes was removed when Genesis 3.0 was released. There's no telling what other issues you might encounter with custom work on the old site.
If your WordPress and Genesis are so old, what about PHP version? Make sure you upgrade to a modern PHP version also.
If I were you, I wouldn't even bother with the upgrade path. I would create a new site with modern standards and migrate the content from the old to the new. You may experience fewer headache that way.

Changing the root percentage will alter the equivalent px calculations across the board. I suggest you take a look at this article to understand why 62.5% works as the root percent.
