In Google Search Console, the Coverage reports shows me lots of 5xx errors. Down from hundreds to 66. They all seem to be related to the Aspire Pro theme.

Has anyone else had this issue? I have multiple sites on this hosting and several sites use Genesis-based themes but this is the only one using Aspire and the only one with these 5xx errors.

Since this is related to Google search and you're not receiving the errors when visiting the site, it is very likely either a 500 or 503 error code. A search engine can’t crawl and analyze your site if it gets 500 and 503 errors. Given the fact that there are quite a few errors shown in your image for WordPress core files, the chances of this being related to the Aspire Pro theme or the Genesis Framework are miniscule.
The 500 code is generated when the server encounters an unexpected condition that prevented it from fulfilling the request by the client. 500 errors are often related to a bug in PHP. But if this was the case, your site would crash when accessing it. Since it's only happening for Google, there's something else going on.
The 503 error code means the service is unavailable. A web server will respond with this status code when it is temporarily unable to handle the request due to short-term overloading or maintenance.
5xx error codes are the most difficult of all to diagnose. It’s hard to find the exact problem they indicate and its simplest solution. Also, you usually can’t solve these problems by modifying the page code and you may need to ask developers or server administrators for help.
I suggest you enable WordPress debug and see if anything shows up when you access the site. Also, check you server's error logs for details. Switch to a default WordPress theme to see if it makes a difference. Check the space on your server. If your server is short on space, it will generate a 507 insufficient storage error. Are you using Cloudflare or any other proxy server? If so, you could be getting 504 bad gateway errors.
Whatever the case, you should contact your server host or site developer for further assistance. Best of luck in getting this resolved.

I'm using Cloudflare and the hosting is Cloudways. Lots of space and a pretty decent high-frequency Vultur server. None of the other sites (5-6) on this server are experiencing this problem.
Cloudways support reckon it's a theme issue because the logs are throwing PHP errors which seem to be related the theme.

The error in the first example, undefined function add_filter() may also be a WordPress issue. add_filter() is a WordPress Core function. Because Genesis can't find add_filter() and you have so many other WordPress Core errors, it leads me to suspect you may have an incomplete or damaged WordPress install. Before I did anything else, I would reinstall WordPress and see if that makes a difference.
