We had to temporarily revert back to the old site because of a problem with WooCommerce. After we migrated everything from development to production, WooCommerce stopped working. We could no longer edit products and confirmations stopped working. It's been a loonnngggg weekend.

Genesis includes the jQuery superfish menu extension, which means the delay is controlled by a JavaScript. It appears that the Jessica theme has this enabled. To disable superfish in Studio Press developed themes, add this to your functions.php:

Jessica is not a Studio Press theme. It is a third party theme developed by Web Savvy Marketing. If the above code does not work to disable superfish, then you should contact the Web Savvy Marketing support team for assistance.

You could move this code out of the media query and into the main part of the CSS. Can't help you further since you didn't post a link to your site or tell us what theme you are using.

It will often trip over modern conveyances like schema.org. I use it only to help locate bad HTML code. The first two errors are not errors and you should ignore them. This is how WordPress works.
The third error is accurate. You should be using CSS classes to format your table.

If you are, the space is coming from the CSS for the recent posts widget.

The two margin settings in the CSS above create the space. The first clock adds the space to the li element. The second adds space to the thumbnail.

add_filter('widget_text', 'do_shortcode');
Besides, why would you use eNews Extended when mail poet has it's own widget forms? eNews Extended is used for adding subscribers to external mailer like Constant Contact or MailChimp. Mail Poet stores subscribers on your site.

I am not familiar with that plugin, but on your page it is loading blog posts, which wouldn't happen with the Altitude Pro home page. When I looked at your source code, I also noticed that the page builder codes does not allow for any of the built-in Genesis schema.org markup. This could hurt your SEO. Unless someone in the community is familiar with page builder, you may get a quicker answer by asking in the SiteOrigin forum.

You are using a custom Genesis child theme. In fact, it is a very old one that doesn't provide any of the HTML5 Pro features. But in general, there are a couple of ways to create category pages. Products are created as posts and assigned to the appropriate category. Then you can create a category menu item in the Appearance Menus page. This is not a physical page. It is a category menu that generates your content at run time. With Genesis, you can also use a custom blog page filtered wth a custom query_args, in which case, this may help: http://victorfont.com/use-query_args-filter-wordpress-posts/
