You add them back in by removing the code in the child theme that unregisters (removes) them. You'll have to create your own CSS for the additional layouts though or copy the css from another theme.

Anything above 800px wide will execute the responsive CSS.

You'll most likely have to create your own CSS to support the additional layouts since the author designed Atmosphere Pro to be minimal

You can either create a custom query or change the publication dates on the posts to order them the way you want.

And the code from the second site:

Both sites are doing the same thing.

To change the title-area class, you need to remove_action( 'genesis_header', 'genesis_do_header' ); in functions.php, then add your own header function. If you look at genesis_do_header() in genesis/lib/structure/header.php. you can model your new function after this one. If you're not an experienced coder, you're asking for a lot of heartache. Instead of replacing core functions, why wouldn't you just change the CSS to have the title-area appear as you want it?
