Instead of that template, I would use this one: http://wordpress.org/extend/plugins/genesis-grid-loop/ You can just tell it to make you categories a grid =).
Also, editing the category loop to be a grid is a bit more complicated: You can view this post for reference: http://surefirewebservices.com/genesis-framework/genesis-grid-style-page-template-with-custom-post-type It's a bit more complex dealing with custom post types, but it's good for research.
Also check out Bill Ericksons Grid Loop post: http://www.billerickson.net/a-better-and-easier-grid-loop/ It's a lot more code but it's very flexible and works great!

That's extremely rough code, not sure if it will work or not but the gist is there. That would target all single posts.

Unfortunately, in most cases, a full width site doesn't work as well as one that's not full width (reasons in above posts). And with more and more computers using wide screens, it makes it more difficult to create a solid user experience with a full width site.
That's not to say that elements of your site can't be full width, like background images, etc., but when it comes to content, stick to a container.

I'm not 100% familiar with the widgets hooks.

I can't really tell without looking at the code but I would mess around with the widths of your columns. And also make sure to clear your floats.
