it is just there as a guideline for what you "could do" if you wanted to.
so if "you wanted to" you could have a site with more content visible above the fold, it does not mean google is penalising you for not having this, but just making a suggestion.
if you like you can give your .front-page-1 a max-height of say 600px this will stop it from filling in the full browser height and bring the start of your content above the fold.
But i think your site site looks great the way you have it anyway.

that's looking quite good
you need a wider image though at the top, as there is just too much white space at the top, you could also use 3 images, instead of one big one too.

yeh i don't think it will do what you ask
i have wp multisite too, and just did a quick test with the same results as you
i'm thinking that because your main site is "the main site" the settings simply don't apply
it only works on the sites you create (subs)

personally i would scrap Premise, i don't know if it is even supported anymore, as SP did Rainmaker.
best go with Yoast SEO, it pretty much does what you need.

you would not be able to, because it would be a sidebar widget and the sidebar moves under the content on mobiles.
but what you could do is create a new widget area below the header, add your contact info to that and style it right so it looks like the sidebar info.
then, you set your new widget to display: none in your css, this will prevent it from showing
and in your media queries for mobiles, you add the same css class, but instead to display: block
that way it will show on mobiles but not on desktops and tablets.
not sure how you are with doing all this, but that should give you some idea as to how you can go about it.

check you have the featured page in the home right widget set properly to show the content and image.
it is there, but just not showing anything.

in order to create a theme, whether from scratch, modify and existing theme, psd to genesis, the process is all the same
all you need is Firefox with firebug installed
a ftp client like FireFTP
and a HTML editor such as HTML-Kit, or coda whatever your favorite one is.
you will also need Photoshop to open psd files, and to grab and graphics that may be required for the theme.
but that's it, the rest comes down to skill and knowledge.

first you would need to create a custom page template, add the code you need from the front-page.php, rename the widgets (and possible the actions too)
then in functions.php, create new widgets with the new names
then create a page in WordPress, and set the new page template to that page.
then you can just add widgets to your new widget areas, and you have your new custom page template
it's quite a task, and a whole tutorial on it's own, but that should give you a bit of an idea.

if you upgrade to Genesis 2.2, the "blog" heading is now on the blog page
but if your talking about the home page, then that is different.
