If you want to hide the image, the display:none should be in the img CSS.

I've been thinking more about what you want to do. The title tag is written to the document header way before the content loop. By the time you access your content and retrieve the custom field, the header has already been generated. If you want to access a custom field that is embedded in content, you're going to have to access that content in the callback function you assigned to the wp_title filter.
You also have an error in your custom code. The priority for the wp_title filter should stay at the default of 10. Also the $accepted_args value in your add_filter is 3. With add_filter, the $accepted_args value must reflect the number of arguments the bound callback actually opts to accept. You are not receiving any arguments in genesis_default_title_new(). Your either have to change the function to receive three parameters, or change the add_filter to drop the $accepted_args.

If so, then you may not have the CSS to display the caption correctly. If you do not see the caption shortcode, the problem lies within WordPress, not the Genesis Framework. The code for inserting images from the media library is generated by WordPress.
Post a link to a page with a post that's not showing the caption.

Style-front.css in your theme is in a css directory.
Using the WordPress editor to change CSS or PHP files is not a good practice. The best way to change files is through FTP. If you make a mistake in the WordPress editor, you can down your site and it could be difficult to recover. If you make a mistake through FTP and an editor on your machine, it's easy to recover your site.

The first requires changing the PHP upload limit. Depending on the server where your site is hosted, this option may not be available to you.
The second is to unzip the theme file and FTP the entire directory to the wp-content/themes directory. You will then be able to activate the theme.

.site-title { font-family: 'Roboto Slab', serif; font-size: 51px; font-size: 3.1rem; font-weight: 300; line-height: 1; text-transform: uppercase; }
You may be seeing a cached version of the style sheet if you see something different.

Keep in mind that styles area rendered in browsers where the last change in the stack is the one that takes priority, so issue could be related to timing as well.
