Could you please point out how I activate the built-in styling for block quotes with the large quotation mark?

This would involve making similar changes to some combination of code / css for navigation. You were savvy enough to catch the necessary css for the logo change, so give it a go. I recommend you use Firefox browser with the firebug plugin as a tool for identifying the css classes that need your attention. A youtube video would suffice to show you how to use firebug (if you don't already know).
Sorry to 'hit and run', but I'm out the door with my 2 year old for some fall outdoor activities, and don't have the time to dig around myself. Perhaps someone else will chime in. Good luck!

Still curious if there might be another, more ninja way to do than having a special category or tag floating around. Thanks for the feedback.

jhguynnMember...in addition to what Anitac wrote immediately before this post, be aware if you are using cloud caching services, like cloudflare or maxcdn. If so, there'll be a delay in seeing your changes.

jhguynnMemberAmit Gaara: I think by "collapsible" Amber means "drop-down". This is accomplished in WP custom menu when you drag items around under a single menu heading. This is best accomplished by producing a custom link first with navigation target = "#", then once added to the menu you can drag all sub-pages underneath that as a "child". i.e.:
Cakes (custom top level link with target="#")
-- cheesecake
--shortcake
--pound cake
--etc.When done this way, cakes wouldn't be clickable, but it would have a downward pointing arrow indicatin "more". Once hovered, the sub-pages are revealed.

background-color: #f2f2f2;
clear: both;
color: #666;Since I had changed my entire site’s background color to white, it made sense to change the navigation background-color to white, and change the hover color to gray. Looks much better that way.
But what effect does the css value ‘color: #666;’ have? Color of what? Text? I don’t see where it’s effect is seen.
