Hi - wasn't sure if this was exactly what you were after but found a couple of things that might work for you.
1) Code to add Next / Previous Post links at the bottom of every post
http://www.binaryturf.com/genesis-tip-add-nextprevious-links-single-post-page/
(Hadn't used before but tested quickly now and worked fine for me)
2) Some kind of plugin like this one from David Decker:
http://wordpress.org/extend/plugins/genesis-single-post-navigation/
Hope they help

I do use Gravity Forms and I find it incredibly useful, for example last week I used it to set-up a form where entries to the form were automatically forwarded to different people with different subject lines depending on the type of enquiry. You can also set-up auto responses etc too. Doing this has saved a tonne of work going forward for that business. I'm not saying it's the only form plugin that could do that but I find it so easy to use that I just wouldn't think of using anything else now.
Hope this helps
- Nick

http://codex.wordpress.org/Shortcode_API
If you know you're always going to put it at the end of EVERY post though you might be best adding it automatically at the end of every post via your theme. (For example you could create a function (placed in your functions.php file or your single.php template file) that would automatically add your asterisk at the end of every blog post).

http://wordpress.org/extend/plugins/documents-shortcode/
I'm pretty sure I used it once before on another project (or maybe something similar)

http://wordpress.org/extend/plugins/genesis-featured-widget-amplified/
It gives you finer control over such things. I end up using it on almost every project I do.

BTW the http://noahsdad.com/test/ link is giving me an error in case you weren't aware.
Cheers, Nick

Do you know if you have FTP access to your website? If so you could try:
1) Connecting to your FTP site and browsing to the /wp-content/themes/ folder
2) Once there you could either rename the 'genesis' folder (or download a copy of the entire genesis folder and all it's content to you local desktop and then delete it from the server)
3) Download the latest version of Genesis (1.9.1) from my.studiopress.com to your desktop, unzip it and then upload the whole folder to your wp-content/themes folder where the previous genesis folder was
It's difficult to help from afar of course (without being able to login) but let me know if you're still stuck and I'll try and help
Failing that you can try disabling plugins by going into your /wp-content/plugins folder and renaming each one (put a dash after the folder name) and ruling these out as a cause
(Things might already be broken but if your hosting company has a backup option I strongly suggest doing that first before trying any of the above)
Let me know if this helps?
Cheers, Nick

I might have misunderstood what you are asking but do you have an option under Appearance > Background (within the WordPress admin) to change the background there?
If that's available you should be able to upload an image to used as a tiled background (a few nice ones here: http://subtlepatterns.com/ ) or just pick a colour
Cheers, Nick
PS If you are still stuck you could try the following plugin from the awesome Travis Smith here: http://wordpress.org/extend/plugins/genesis-custom-backgrounds/

http://quick-markup.com/p/515f0ef421890
I also tested it on a PC (no screenshot unfortunately) and it was OK there too
Not sure what else to suggest other than clearing your cache if you having the same problem still?

Try the following (adapted from the awesomely helpful Bill Erickson method here: http://www.billerickson.net/genesis-wordpress-nav-menu-content/ - all credit to him)
*EDIT* Code removed and added at the following link as it was getting chewed up:
https://gist.github.com/esanctuary/5320863
There is probably a more efficient way of coding this but wanted to get something to you quickly.
To implement:
1) Copy the code from the GitHub link above into your functions.php file and save (if you're not sure about this part make a copy of the file first)
2) Disable the Primary Navigation Extras in the Genesis Settings menu (but don't delete your Twitter ID or text from the same section as these are used in the above code) and saveEverything should be cool, I've put a working version here using the same theme: http://app-outsourcing-guide.com/
