Other than that you can just try experimenting with different JPG qualities when saving (you'll generally want to be saving photo like images in that rather than PNG)
You might also have more luck with 'blurry' images as generally the file size of these will be lower.
You can try websites like unsplash.com to get free stock images if you need to.

Of course it depends on the kind of style and out of the box features you're looking for but if you can't find anything you like in 'standard' Genesis themes it might be worth checking out some of the other Genesis theme providers if you haven't already:

http://zigzagpress.com/themes/(I've yet to use any ZigZagPress themes but have used themes from Appfinite and Themedy before and they've both been great.)
For example I really like the Readyfolio 2 theme from Themedy but it's down to personal taste. Also I like Education from the StudioPress ones: http://my.studiopress.com/themes/education/ but there are some new ones coming out so it might be worth seeing what comes out in the next few weeks if you don't have to decide right now.
If you can't get one exactly like you want it then I'd get one as close as possible in terms of features and layout and then you can either customise the smaller things yourself (e.g. changing colours etc). If you're not sure how to do that you can ask on here or hire someone to make some small changes for you.

I'd also say it's important to consider having a good host that's clued up on such things, typically one that only deals with WordPress, as they'll be more likely to be proactive on such things (based on personal experience).

From having a quick look at your site my best guess would be to check the settings in the Yoast SEO Plugin that you're running.
There's one option in there which enables you to disable the Date Archives and just redirect people to the homepage instead.
(From the WordPress menu check SEO > Titles & Metas > Other > Date Archives > Disable the Date Based Archives checkbox)

Just my 2c but I would look into moving hosts which might not be the answer you want right now, but I can't imagine any good reason why you should be spending time on reducing resources like this. There is nothing SO resource intensive about WordPress or Genesis (which is famously 'lean') to my knowledge that your host shouldn't be able to handle.
I have a client that runs multiple sites on HostGator for example (which is cheap hosting) without issues (I don't recommend them per say but to give you an example).
Personally I use WP Engine but there's other dedicated WordPress hosts out there too. BlueHost is another cheap option but I would certainly recommended a dedicated WordPress host if you can (which BlueHost and HostGator are not).

If you want a quick solution, you should be able to add it under:
Genesis > Theme Settings > Header and Footer Scripts
via the WordPress menu and it should still work fine (e.g. in the wp_footer(): section) even though it's not in the exact position that FB recommends (I have done the same before)

Genesis > SEO Settings > Homepage Settings
Otherwise you will need to edit the meta description via whatever WordPress SEO plugin (e.g. WordPress SEO by Yoast) you are using or disable the SEO plugin and the Genesis SEO settings will take over.

I noticed the right side of the header still cuts off slightly at some screen sizes, but that apart if you want to remove the white space above and below at smaller sizes you could try editing the following bit of code in your style.css file (showing as line 578 for me):

If you edit a couple of values in your style.css file you can change this. style.css can be found in your /wp-content/theme/YOUR-THEME-NAME folder via FTP (make a copy of the style.css file first if you're not 100% sure on what you're doing).
Scroll down till you find this text in style.css:
