I thought it might possibly help someone here to know how I finally fixed it today. First, regarding the versions, everything was up to date, it shows in the dashboard: "WordPress 5.4.1 running Lifestyle Pro theme. Using Genesis 3.3.2." but after a few more efforts to download and ftp the plugin to the plugins directory I got an idea. I have other sites with the same exact theme/versions environment and the plugin updated there with no problem, so I thought that if I already had a version installed, I could just update it.
I looked through my old files and found an older version (2.2.0) of the Genesis Simple Hooks plugin.zip and installed that one via ftp. It installed just fine, no errors, then it showed the "Newer Version" notice, so I updated it via the older version on the plugins admin page and it is working fine now.
When I went to wp.org to download the Simple Hooks plugin most recent version I noticed that there was a support question there from a few weeks ago with the same header problem so I can see that I am not the only one with the 'no valid header issue'. That person had deactivated a 'Disable Gutenberg' plugin and then was able to install Simple Hooks without that header issue.
I am not using any Disable Gutenberg plugin but I am increasingly seeing why a person might wish to install a plugin to disable Gutenberg. The site I am updating was built in 2009 and is full of old deprecated code. Editing hundreds of old posts and pages was not on my wish list.
At any rate, this problem has been resolved. Thank you for the helpful community to share information.

After installation there was a notification that an update was available so I clicked to update it. So it auto installed.
As far as I know there are no updates that are not installed either for WP or Genesis or the theme.
The Theme is Lifestyle Pro v3.2.4
Since the time I first posted, I went ahead and edited the functions.php file but things that have taken care of header issues are not doing anything now.
This site was not using a Genesis/StudioPress theme this morning. It's been a long day but since that site was not even at PHP 6 when I started today and was not using https: I will get back to it again later today. I'll take a look at the versions or examine a copy via ftp this evening. It could be too many changes that did not all register.

2ferParticipantThank you Anita! I certainly appreciate your fast and helpful response! That worked just fine for me once I set up a Featured image and selected a proper amount of text.
The page loads so much faster without 5 pages of images loading. This is not one of my sites, it belongs to my other half or those would have been pages. I just do the css and proofreading for his sites.
(OT - Now I need to search and find out what on earth happened to my editing window. I am so lost in there, the html window is gone?)
