For the copyright in the footer, how can I change it to display as roman numerals instead of the standard Arabic digits?

There is no native PHP function to convert integers to Roman numerals. To do what you want, you would have to create your own function and shortcode.

The copyright shortcode supplied by the Genesis Framework can be found in the Genesis /lib/shortcodes/footer.php file. I would copy and rename that shortcode and modify it to call a Roman numeral conversion function that you'd have to write. You can learn how to write such a function here:
