I answered my own question. Thought I'd post the solution in case it helps any other genesis noobs.
I removed the existing header function and replaced it with a slightly modified one.

Unfortunately our permalink structure is already just 'post-title'.
I suppose it's probably better to be happening on the home page rather than a category page, but it'd still be nice to get it working.

thestudygurusMemberHi Heather, I think I might jump on this bandwagon as I'm having a similar problem on our website. (Sorry I can't offer any help!)
I'm using Genesis with the Maximum child theme. Unfortunately, for our site this mainly happens on the home page (where we've got our most recent 10 posts showing) but it works fine on the category pages.
If you go to http://www.thestudygurus.com/ and click next page (at the very bottom) then you get to http://www.thestudygurus.com/page/2/ which shows exactly the same posts.
Any suggestions? Thanks in advance for any help 🙂
