In order to change the text color, you need to change the "color" property in the CSS file.
For example, to make the Home Top text white, the CSS would be something like:
.home-top { color: #fff; }
To change the text color for the heading titles, it would be:
.home-top h4 { color: #fff; }

nerdworkerMemberIf you are just wanting the current date in the sidebar, you don't need to use the date that is in the nav.
One way to accomplish this would be to use the PHP Code Widget plugin, which is similar to the Text Widget, but allows you to use PHP code as well: http://wordpress.org/plugins/php-code-widget/
Place the PHP Code widget in your sidebar and type in code such as:
<?php echo date_i18n( get_option( 'date_format' ) ); ?>

nerdworkerMemberIn the case of both sites, there appear to be inline styles on the #header that are causing the problem.
On the http://www.snowdonmarketing.co.uk/ site, I was able to correct the problem simply by removing the inline style. That left the CSS code as follows, which is the format that you want:
background: url('http://www.snowdonmarketing.co.uk/wp-content/uploads/2012/11/cropped-header.jpg') no-repeat scroll center center #090909;
On the http://www.davidmcleanhypnotherapy.co.uk/ site, there appears to only be inline styling for the header. This styling needs to be changed to mimic the format as above to correct the problem. Most notably is the "center center" that will place your header image back in the center.
