    What kind of site will this be - ecommerce or simply informational?

    Ideally, each item will have its own page. However, you probably need to group them in some way to get visitors from a landing page/homepage.

    I think the best thing to do is to find a comparable site and see how they've done it. Will provide you with some insight and a plan going forward. As long as you have a vision for how your site will look, there will then be numerous ways to actually put it together.

    Do you have a link to the site? That would help. The 3 column layout should act as you want so there is either some content in the sidebar that is causing the issue or your CSS needs an adjustment. Can't tell without seeing the site though.
