What I've done:
Inserted your code above into function.php
Assigned "web design" category to posts I WANT to remove the post_info from.It removes the date and author from ALL posts, regardless of the category assigned and whether or not I have the shortcodes in the $post_info section or not.
Have not fiddled with the css.

asdwebMemberIt works when it is in landscape and it is a Contact Form 7 issue, not an Agency or Genesis issue.
You need to contact the developer for Contact Form 7, but I did find this: http://wordpress.org/support/topic/making-contact-form-7-responsive

Modifying the stylesheet starts the process to customize the theme. There are tons of tutorials and how to's for general changes/customizations to the style.css such as; http://www.w3schools.com/css/
Once you get familiar with the basic css structure, making changes is fairly simple. You can always ask here on the forum for specific help.
For example to create a border around the content would be finding the selectors for the post entry.
.post {
margin:0 0 40px;
overflow:hidden;
}then adding a border around the text. Because the line was so close to the text, I added a slight padding to put some space between the border and text.
.post {
margin:0 0 40px;
overflow:hidden;
padding: 14px;
border: 1px solid #000;
}

The style.css is where you add/remove/change the look of the site.

It could be because you are editing the properties for the "default" setting (see Genesis --> Theme Settings --> Color Style), it that's the case, the colors won't show up.
