    featured-post-widget.php, line 126, is this code

    if ( ! empty( $instance['show_title'] ) )
    printf( '<h2><a href="%s" title="%s">%s</a></h2>', get_permalink(), the_title_attribute( 'echo=0' ), get_the_title() );

    How do I add something to functions.php in my child theme to strip out the h2 and change them to p?

    if ( ! empty( $instance['show_title'] ) )
    printf( '<h2><a href="%s" title="%s">%s</a></h2>', get_permalink(), the_title_attribute( 'echo=0' ), get_the_title() );

    All those h2 will mess up my SEO efforts.

    Sorry this can't really be done. The only way to change that is to make your own custom widget.
