    Hello
    I'm trying to unregister some layouts by using e.g.

    //* Unregister content/sidebar layout setting
    genesis_unregister_layout( 'content-sidebar' );
     
    //* Unregister sidebar/content layout setting
    genesis_unregister_layout( 'sidebar-content' );

    however, the layouts still appear in the genesis settings section and on the pages layout settings.

    what am I missing?

    That's the right code to use to unregister layouts. I just tested what you posted above and it works fine with the Genesis Sample theme. Here are few things to check:

    1. Make sure you are placing the code in the child theme's functions.php.
    2. Check that there's no other code in functions.php that could be enabling the layouts again after your code.
    3. Clear all caches, (i.e. server, browser, plugin, etc.)

    Thanks Victor - the issue was that I'm using a 'genesis_setup' function - it needed the priority set to 15 in order to make this work.

    You don't need to use genesis_setup function. Just placing the code in functions.php will work. Also, you never mentioned genesis_setup in your original post. We can't help you if you withhold details.
