    Does anybody know if it's possible to get the genesis_prev_next_post_nav code snippet to only display links to the previous and next post within the same category as currently is being viewed?

    No. You need to use another code snippet which includes that parameter.

    Otherwise you can grab the code from the post.php in Genesis and modify it using the in same category parameter
