    I have an issue with my responsive menu. It shows up white text on a white background and I can't find the code to change. When you press the screen the menu items show up as a hover.

    Advice on where to find the appropriate code will be most welcomed.

    This should correct that for you.

    @media only screen and (max-width: 768px) {
    
    	.site-header .genesis-nav-menu.responsive-menu  a {
    		color: black;
    	}
    	
    	.site-header .genesis-nav-menu.responsive-menu .current-menu-item  a {
    		color: #44ace8;
    	}
    	
    }

    That works. It has thrown up another issue with the dropdowns on that responsive menu ... but I am on the case.
