If I replace the entire outreach-pro theme what files do I need to be careful of overwriting
so I don't mess up my website. As far as I know I've only edited functions.php and style.css
What files can I remove in uploads folder?

Well if you change theme, you will lose all the edits you did in both the functions.php file and styles.css

What if I replace all outreach files except edited functions.php file and styles.css?
Are there any other files that may have been changed during the construction of the site?

Under normal conditions, functions.php and style.css are the only files that are typically changed, but it depends on the developer that built the site for you. I tend to put customizations in separate files and call them from functions.php.

Thank you..an ini.php file (malware) gets added to the root folder which is picked up with a scan from wordfence.
How do I prevent this from happening every day?
