Even though I've changed the "reading settings" to "summary" instead of "full text," when I click on my menu button to bring up a category every article is shown in full, instead of just a summary. Is this a bug? How do I fix this?

Check in Genesis > Theme Settings - there's a section for how you want your blog posts and archives to display.
