If I access media files from the admin, the formatting of this section is all messed up. Most recent images are off screen (to the left: https://plentyvegan.com/wp-content/uploads/2017/04/Screen-Shot-2017-04-10-at-11.48.52-AM.png) and when you click into an image, you can see that the scroll arrows are not there: https://plentyvegan.com/wp-content/uploads/2017/04/Screen-Shot-2017-04-10-at-11.49.04-AM.png.

The only way I can access a properly formatted media screen is from the posts or pages interface.

Any idea what's going on here?

This doesn't have anything to do with Genesis. You are most likely experiencing a caching issue or plugin conflict.
