I've used a theme in the past that allowed full control over excerpts. A text box on the new/edit post page where you could type your own excerpt... meaning the text that showed up on the blog feed was VERY controllable, and you didn't have to write your posts thinking, "I have to do this so when I put the 'more' tag in, it will be perfect!"

Maybe there's a plugin I should be looking at? Or, can this be done with Genesis? I'm running Education, and would love to have full control over my excerpts.

Manual excerpts can be used in any WordPress theme. If you do not see them in the Post editing screen, enable it from Screen Options. Tick the "Excerpt" check box.

the_excerpt(); will output manual excerpt if present, if not first 55 words will be shown (by default).
