    I want the layout of the site to be all included in the div-container (including the div site-header) to do this I modified the child theme css by setting max-width: 1600px; in site-container with a border of 1px black I got almost the desired result because all the divs of the layout are contained in site-container except site-header that has the right side not contained ... how can I do to also include the site -header inside site-container?

    The site-header is already inside of the site-container in the markup, but the site-header has position:fixed applied, which takes it out of the layout flow. Remove that, and it will fall back in line.
