I love the design of the featured post plugin, but would like them to be non-clickable. Is this possible and if so, how?

What specifically do you want to be non clickable?

The featured image or the title?

Also, two links in my header menu are anchor links but they are the hovered color. I'd like for them to not be.

Here's the solution i worked on for over half an hour which removes the link from the genesis featured posts titles.
