Almost any Genesis child theme can do a content/sidebar/sidebar layout with a full width header and footer. You can use a plugin like Genesis Simple Sidebars to create a different sidebar for single posts, and it's easy to change layouts on single post pages as well. Honestly, if it were me, I'd probably use the Sample child theme (but that's what I usually do anyway). To me it's easier to start with a blank slate than to spend a lot of time undoing things that are already done.

Actually I used a plugin. 😀

There are a number of shortcode plugins out there that will allow you add tabs, toggles, accordions, etc. to your pages.
