how to exclude one category of posts from genesis featured posts widget?

You can only modify the query in the widget using the widget settings. Anything else requires you to copy over the widget to your child theme and modify the default code.
Otherwise, you may find a extended version of the widget, in the form of a plugin which includes the options you need.
Would you recommend me the extended version of the widget? Now I do not use child theme so the plugin would be better solution.
I don't know of any that are currently maintained so you will need to search or ask the Genesiswp community on Facebook.
