    I have a latest news roundup page on my site that will be better as custom posts to a blog template page, separate from my actual blog. I think I can use the portfolio CPT that comes with Exec Pro, but obviously this is set up to output to a portfolio template page.

    How to I achieve this please? Do I delete the single.portfolio.php template, so it defaults to the blog template? Or do I need to create a new template? If new, can I do this via CPanel by copying and then renaming the blog template? I appreciate these are probably very basic questions, but am still a beginner with this.

    You should first try to delete the single-portfolio.php and the archive-protfolio.php to see if that will do what you want. If you want something else, please list exactly what you want and post a link to your site.

    Thanks Marcy, seems to have done the trick and displaying well on a test post.

    I guess I now need to change all instances of 'portfolio' to news in the functions file and also the CSS? Is this correct?

    Yes, that's exactly what you should do.
    I style.css and functions.php, change portfolio to news.
    And you may need to flush your permalinks. Go to Settings > Permalinks and click Save
