In the demo of enterprise pro there are 3 boxes with photo and text. With that theme will it be a easy to create 6 or 9 boxes and make adjustments to them with css?

They are just widgets. You can adjust widgets any way you'd like with CSS.

The demo is showing the standard site title and description that you entered in the General settings when you setup the site. The search form is in the header right widget area that is standard in the Genesis framework.
