Customizing a Category Page in Enterprise Pro Theme

Hi!

I need help customizing the following category page that I've named to pull in testimonial (categorized) posts. I will be adding more, but this is the start of one. http://srinikahealing.com/draft/category/testimonials/

I am using the Genesis Grid Loop plugin, but it's creating an error on this page, plus I want to be able to control the amount of excerpt text before the "Read More" link. Any ideas of why the error is popping up? I remembered on the Executive Pro Theme, I was given the ability to control the amount of text for featured and teaser posts. I didn't see it in the Enterprise Pro theme.

I would also like this page to be a full-page template and not have a sidebar.

Lastly, how am I able to keep the testimonial posts showing up on the 'Recent Posts' list?
