I'm helping out a cycling group that wants online registrations. I messed about with some existing form plugins but none did what I needed so I gave up and wrote my own. I've got some of the label & input pairs in tables and that's fine on a big screen and scales down on a tablet ok but the inputs don't shrink appropriately.

Is there a typography page or similar where the "best practice" is set out? something a bit like bootstrap has where you can see examples and then just peek under the covers to see what classes get used.

Yep, they didn't give me the control I needed and I'm happy with the result I've achieved from a long term data management perspective. I should be using divs and not a table but I'd need to know the genesis class names to make a user defined form work the way the designers intended.
