I would like to know if there are any SEO issues or site structural problems if I decide to remove a tag from a post or add a new tag to a post after the post has already been posted?

    Thanks!!!

No problems adding a new tag but you may get a 404 page not found error in Google Webmaster Tools if you delete an existing tag.

    Try this plugin: http://wordpress.org/extend/plugins/term-management-tools/
