    So I successfully was able to center the secondary nav menu on this site using inline and inline-block properties.

    but now the drop down subnav menus are aligning left. Any tips on how I can fix this?

    Remove all the CSS you added, start with the de default .genesis-nav-menu styles.

    And just edit these two;

    .genesis-nav-menu {
    	clear: both;
    	color: #999;
    	font-family: Lato, sans-serif;
    	line-height: 1.5;
    	width: 100%;
    	font-size: 16px;
    	font-size: 1.6rem;
    	text-align: center;
    }
    
    .genesis-nav-menu .menu-item {
    	display: inline-block;
    	text-align: center;
    }

    Change #subnav li from inline to inline-block and remove float: center
