Hello,
I am trying to adjust the font size and image centering on my category pages. Could anyone take a look at this page and help me? I want smaller post titles and larger and centered images.

I would use larger images between 300-350px width.

To center the entry-title, you can inspect the element, find the body classes and use CSS. This is something all theme users need to learn. http://www.studiopress.com/tips/using-firebug.htm
