Is it possible to automatically add categories and sub categories in the top drop down menu please?

This will do it for you:
https://wordpress.org/plugins/add-descendants-as-submenu-items/

Example on this site, which uses a menu of only the top-level items. Each subsequent post, if using a new subcategory, creates a new sub menu item automatically.
