I'm on an old version of Genesis Frameworks, 1.8. Is there a way to add a field between the menu bar and the content/sidebar? On just the home page too? My client wants his slider to go across the whole page.

Hook the slider in using the genesis_after_header hook with the sliders function call.

unfortunately the Genesis Simple Hooks plugin doesn't work with my older version of Frameworks 1.8. And the client doesn't have the budget for me to redo the site with a newer version. I did try that but it just totally messed up the site, php errors and css all messed up. So for now I need to stay with what works and just update that.

Is there a way to use this code in the functions.php without the plugin?

The Genesis Simple Hooks pliugin works perfectly.

Also, thats exactly what the code examples i linked to do also.

They are all tested and work however you must use PHP correctly otherwise it will cause errors.

The plugin will not work with my older version of Frameworks, according to the error message I get when I try to install it.

I don't know PHP so your link is very confusing to me, so many options, and not a clear picture of where the code goes in what file - header or functions.php? and what to change if I am using a different slider program.

Also, if anyone else is reading this, I would like to place the slider below the main menu, in the above examples it has it above the menu in the header area.
