I'd like to have a simple menu (top level links) to the footer - basically below copyright/credentials using Genesis 2 - what's the proper way (Genesis way) to do this?
any code examples/instructions are welcomed.
You can reposition either the primary or secondary nav menu after the footer or create a widget area after the footer and drag in the custom menu widget into that new area after creating a third menu.

Preferably, I'm after a solution using functions.php only even more so as I most likely need a similar solution when adding a Mobile menu I guess.
