Honestly, I am not sure if you can make a child them of a child theme. Even if it is possible, I would never do it as it would become a mess in the end.
Stuff like Google maps would be better off implemented as a plugin. This allows a separation from the theme in the event you update/change themes at a later date. Custom Post Types fall into the gray area depending on how they are used. In the past I have always created Custom Post Types as plugins and adjusted my theme to accommodate the output/display. That way if I change themes, I don't have to worry about adding codes for files to the theme, just the presentation of my custom post types.
You could always created Genesis specific plugins that target the Genesis actions and filters. This would allow for flexibility with styling and presentation.
Other developers here can add their two cents on older themes being upgraded to responsive layouts as I have not used a lot of the themes nor been around long enough to be aware of the upgrade effects.

Also, I noticed the image displaying under the first post was stretching incorrectly. By adding an height: auto rule to images, this should solve the problem globally.

Welcome to WordPress and Genesis. You are correct in your understanding of child themes. If the parent theme receives an update, it doesn't affect the child theme.
During a page load in WordPress; If a child theme is used, WordPress will check for a theme file in the child theme first. If that file does not exist within the child theme, it will use the parent version.
One exception is the functions.php file. They will both be executed within a page load, but the child theme functions.php will be executed first.
Best bet is to get familiar with Genesis actions and filters. A sample child theme should available for download on your StudioPress downloads if you have purchased previously. Check it out and experiment.
Also note: Never edit the WordPress core. Never edit the parent theme.

rfmeierMemberGlad I could help. For the second question look at your style.css around line ~1769. The media query adjust the widths of the 'columns' when the screen hits a certain size.
The initial styling for the .one-third column is at ~652, then ~678. Once the screen is re-sized, the styling at line ~1769 becomes the dominate style since the screen is within the media query range on line ~1733.
You will have to determine how you want to column to display when the screen is re-sized; either full width, or do nothing.

With css;
.single .category-portfolio .entry-title, .single .category-portfolio .post-info { display: none; }
This css will hide all post title's and post info for all single page posts that are in the portfolio category.
or with code;
This code will hide all post title's and post info for all single page posts that are in the portfolio category.

The issue with elements that float: left or float: right is how wierd they act. Elements after will attempt to fill up that space which creates an odd display.
If the element after the floating elements has a clear: both property it will fix the problem most of the time. So, if you add a clearing attribute to the following
element, it should fix the issue.
<p style="clear: both;">This is some test text. It will clear floats before and after it.</p>

The quickest way to do this is probably through css. You can try adding the following css to your style.css theme file.
.home .featuredpost .category-portfolio h2 { display: none; }
This will hide the titles (h2) within the featured posts widget (.featuredpost) that are in the portfolio category (.category-portfolio) on the home page (.home).

This should remove the default background image.

Having the textbox and button inline would be hard as the paragraph styling would have to be broken.

Other pages with this same template will follow the styling. Make sure this is declared after the initial styling (around line 806).
