MemberI'll answer my own question lol
It's a WP option not a StudioPress one.
By default that option is not shown, in the WordPress/Appearance/Menus page you need to change the screen option dropdown menu (at top right of page) to enable "Link Target".
When you add a custom link to a menu, click the custom dropdown arrow on the right of the new menu item and the "Open link in a new window/tab" checkbox will appear.
Hope this helps someone else.

MemberThanks for the pointers bandj.
I had to strip out all the hover lines from that block and apply the the background just to my new hover block because it added the background colour to all the active menus/sub-menus.
But thanks to you I have it working just right now.

MemberI switched to using Genesis SEO. Converted all the seo data over from WordPress SEO using the SEO Data Transporter plugin and made sure that Canonical Paginated Archives was checked. Result - no change, still getting the /page/2 etc. showing. Any other ideas Brad (or anyone else) please?

MemberHow can you make the same change when using the Yoast WordPress SEO plugin? The Genesis SEO options no longer exist with that plugin activated?
