If it would be easier for you, you can "de-activate" the WordPress header support by deleting:

/** Add support for custom header */
add_theme_support( 'genesis-custom-header', array( 'width' => 960, 'height' => 100 ) );

from you functions.php file.  Then the header text/logo section will be back in the Genesis preferences.

First of all, nice site 🙂

You added the responsive rules to this section:

@media only screen and (min-width: 600px) and (max-width: 960px)

Which only accommodates screen sizes between 600px and 960px.  You need to add rules to the media section above as well:

@media only screen and (max-width: 600px)

Increase the height and then add:

background-position: center bottom !important;

to the #header rule.
