Thanks but enabling HTML5 isn't compatible with my theme. I need to update to the latest child theme but at present don't have the time to hand edit all the CSS like I did in the previous version.
I found my answer. For anyone else in the same situation

Obviously you can change the HTML to displayed what you desire but you will need to include the open html and head calls. It is also highly recommended you keep the meta type. This code will allow older themes to keep working unlike the HTML5 conversion. I added an extra space at the end to keep the line breaks when viewing the code, however it isn't necessary.
JeremyMemberWell that is unfortunate. I guess we are sticking with the plugin for now. We just don't have the time to move things over to the latest news theme.

JeremyMemberYeah I know there is a newer one but one of the reasons for genesis framework, besides central management of core code, was to allow site owners to modify the child theme. I have done this heavily. CSS files have been heavily edited, functions calls have been changed to pull out stock header and custom headers and footers added, new sections added to .php pages, etc. For us it isn't just upload new news theme.
Dozens and dozens and dozens of custom edits would need to be reapplied, which would take a long time. So upgrading isn't straight forward and things are stable. I am just wondering if there is a call that isn't firing because the stock header is missing or something.
We run many sites but http://www.cyberws.com is a small one you could look at it. Other sites we run third party plugins but I would prefer genesis do all the lifting if possible.
