As Chris said, the Premise plugin is pretty good. It's also cheaper than Wishlist and you can use it on multiple sites. Wishlist is also not multisite compatible. Take my opinion with a pinch of salt - I've never used Wishlist!

Perhaps suggest to the client to separate that into a different application like Highrise by 37 Signals. Then the blog posts and editorial calendar are more straightforward. If you are set on having the employee info on the site, you can secure things by making it SSL. Good luck with the project!

I've had clients like that as well and the way I try to mitigate the problem is by by saying upfront that they only get a 1 hour Skype consult once their site goes live. Additional coaching will incur my hourly rate. If they protest I point out that other customers only need an hour or sometimes less and that I also provide a series of comprehensive tutorial videos (unfortunately my customers hardly ever use them).

Have you seen Bill's tutorial on modifying the grid loop content? He has a function in there that replaces the_content() with the_excerpt().
