Which theme will let me summarize blog posts 3x3 like this:
https://mycopy.info/exampleblog/

instead of
vertically (which I do in my current blog, cathygoodwin.com/blog)?

Is it just a matter of a setting in a theme like StudioPress or are some themes set up with the blog like this?

There are quite a number of themes that do that, but not StudioPress. You can achieve the grid on your current them using the Genesis Grid plugin - https://wordpress.org/plugins/genesis-grid-loop/.
