    I really like how studiopress handles my categories with thumbnails on my home page here:  http://tinyurl.com/aogvrwh

    On my category archive page it just displays the posts one after another and its not very usable: example:  http://tinyurl.com/bxsecl7

    Is it possible to use a shortcode or template to achieve the same result?  If so, can somebody please direct me to a tutorial or plugin to do this?

    Try David Decker's Widgetized Archive plugin - http://wordpress.org/extend/plugins/genesis-widgetized-archive/screenshots/. This may work for you. Play around with it.
