Can someone please help me with a tutorial or a good article/thread that will teach me On-Page SEO, most especially how to use H1,H2,H3 tags in my post.

Is the "document title" my H1 tag?

OR do I need to write the H1 tag separately in the post page?

Here is crust of using tags. If your WordPress Theme is coded properly like using Studiopress themes.

Homepage of website - Title of website is automatically using h1 tag, You can confirm by opening source code and it will have <h1>Website Title you have placed</h1>

For single post or pages - The title of the article is automatically using h1 tag. However, you can manually assign h2 h3 tags within post contents like:

    1. Goto to html mode of post editor.
    2. Type <h2>Sub heading</h2>

As such using h2 and h3 tags within post in enough, not need to extend till h3 or h4

    Hope this clears few doubts.
