I've got a site running the basic genesis theme, so the sidebar on both "Pages" and "Posts" shows 'Recent Articles' in my sidebar, as defined in the widget area (using Genesis Featured Posts plugin).

Is there an easy way to have the "recent articles" only show articles from the current category?
So for example I've got a car website and someone goes into either a subpage "Ford" or article under the category "Ford" - then in the sidebar I only want it to show "Recent Articles" from the category "Ford"

As an alternative... I was just thinking - is there a way to just make a sidebar or widget for each category and then I could put specific content into each one? So I might have ford-widget.php / chevy-widget.php... etc. ? And then I could put my php content in each? I don't really care the method, but the end result is that I'd like to be able to create specific sidebars for each page template.

Try http://wordpress.org/plugins/widget-logic/ for controlling where widgets appear, and use several instances of the Recent Articles widget, or one of many other featured post widgets, like http://wordpress.org/plugins/recent-posts-widget-extended/
