If I remove [post_tags] using the Genesis - Simple Edits plugin, will google bots still see and index the tags? Are they just hidden from visitors or hidden from Google too?

Thanks in advance if you know the answer and can share with me.

Since post tags will not display in the actual code, Google won't index them.

However, more fool proof solution would be setting no-index for tags and categories in the settings of SEO plugin that you use.
