I'm using the Posts for Page plugin to have all my posts from a specific category shown on 1 page so my visitors can look at posts by subject. Unfortunately this plugin uses the first image in the post as the thumbnail and some of my posts are showing up with random images. I don't think there is a way to set the plugin to use the featured image so I'm wondering if anyone can recommend another plugin which can perform the same thing but gives more versatility with which image is used as the thumbnail?

I'm not sure what the point of using a plugin for this is, as WordPress supports this kind of behavior with an "archive" page, not to mention there are VERY simple snippets of code to query all posts from a single category. I would strongly urge you to read outside of your comfort zone, and search for how to show all posts off a category / tag / topic on a single page by adding code to functions.php, or creating page templates. It's not as complicated as any of that may have sounded, and this really isn't the kind of task a plugin is needed for, IMO.
