I have seen some websites where at the top (or bottom) of the post they have a button on the left that says previous post and a short title and on the right another button / arrow that says next post and a short title.
I assume these previous and next posts are within the same category
I want to have something a bit more structured than the random related posts I showing up now at the end of each post.

This is great the only problem is that it doesn't go to the next post within the category that the post is in - it goes to the next post that was created (even if it's in a different category. Is there a way to limit it to show just the posts that are in the same category?

That's the way it's coded in Genesis. To link to the previous and next post regardless of which category they're in.
To link to posts in the same category, you need different code.
